01 / ABOUT THE PLACE

About this place

Steaming over a tabletop burner, Hakata motsunabe—a simmered hot pot of beef offal—is the essential order at Homare Hatchobori. The soup comes in 3 varieties: a classic soy sauce base blended from regional Kyushu seasonings, a rich miso broth, and a clean salt broth designed to let the natural sweetness of the beef offal shine. Diners can add extra offal, vegetables, and tofu as they eat, finishing the meal by simmering thick champon noodles or a rice-and-egg zosui set in the concentrated broth.

The izakaya menu beyond the hot pot is filled with Kyushu regional staples. Piping-hot teppan gyoza arrive sizzling from the iron pan with juicy fillings, while authentic Miyazaki chicken nanban comes topped with house-made tartar sauce, and charcoal-grilled Shinrin-dori chicken offers an enticing smoky aroma. Lighter bites like Hakata su-motsu dressed with sliced spring onions and ponzu, spicy Kumamoto karashi renkon that cuts through rich shochu, and lightly seared mentaiko keep conversation flowing between drinks.

Skewers and daily seafood offerings deserve equal attention. Limited-quantity white liver is grilled gently over low heat and finished with fragrant sesame oil, served alongside Marumi pork belly skewers from Miyazaki, daily three-fish sashimi platters, and sesame-marinated amberjack (goma-kanpachi). Authentic shochu labels like Kuro Kirishima, Shiro Kirishima, and Mitake are available by the glass or as keep-bottles, while the Bai-Bai Highball system—where each subsequent glass increases in mug size—adds a lively touch to evening gatherings.

During lunch, nearby office workers fill the dining room for hearty set meals that include free refills of rice and raw eggs. The interior is spacious and equipped with touch-screen tablets at every table, making ordering straightforward whether dropping in solo, having a casual meal in a small group, or booking a larger banquet.
